Jetta among the Saints

Hello, Darlings

While we are waiting for the city’s environmental department to deliver the mulch that we ordered, I took this picture of Jetta sitting among the saints. She is an old lady now, all eight years old, which is 48 in human years. She uses to be very shy but because of Sam, she is more vocal and visible.

 
The statue on the left is Saint Francis of Assisi, who the patron saint of animals and the statue on the right is Mary, the mother of Jesus.

Naturally, I intend to create a shade garden out of this. See the photos and the film below.







Most of what you see here is cleared, and whatever leaves and small branches that have fallen since we place our mulch order in late May can be easily removed before its delivery. The sunlight is limited and filtered but there is enough of it for some flowering plants. The shaded area is plentiful for the many shade plants I have today.

Once the garden is complete it will be dedicated as a Mary Garden, so check back later for the finished project.

The Pushback Against The COVID 19 Lockdown … How Unwise Is That?


This article is inspired by Alyse Stanley and Daniel Uhlfelder article “Grim Reaper Educates Florida Beachgoers On the Benefits of Social Distancing”.


Despite the fact, many want to return to the days when wearing masks, social distancing, and the stay-at-home order was not affecting lives around the world, there are still some folks that take unthinkable risks with their lives and those of the public.

Sure all of us want to return to the normal days, but the rising number of COVID 19 positive cases and death are going unreported as frequently than in the beginning, they are rising daily and in some parts of the world, those numbers are tripling. Yet, our lawmakers want to throw us out into the world to face an unseen enemy to frankly put prevent a recession we were under before COVID 19 upended the world, turns into a depression to rival or surpass the Depression of the 1920s. 

Although the president's office can order businesses to remain open or reopen, there is no guarantee that the general public will venture out in mass to shop, or that people that are not sick will be safe from the virus.

Simply put. People are scared.

If it was not necessary, they probably would not go out any further than their mailboxes.

Should people return to work too soon given the rate of increase in the numbers of reported cases, they risk becoming ill on the job, and what about the rate of re-infection. I stress the number of reported cases as no one knows the numbers of unreported cases. It has been mention; however, no data has been presented showing that it is prudent to return to any normal activities. Still, it is understandable that some people given their financial situation have no other choice. So, what is the right thing to do?

To date, there is no cure, healthcare workers are succumbing to the virus, and there is not enough protective gear for them all or the general public, schooling is being done in a whole new way, many families and businesses are facing ruin, the food shortage is becoming apparent because workers are becoming sick and in general some people are overstocking. Because it is strongly suspected (by brave souls who did the research) that COVID 19 has been around for about two decades and that little was done about it back then, today not everyone is being tested.

As for the testing centers, there are not enough of them. They are placed too far for those without means of transportation, and none are intercity. Mail-in self-test kits beg the question of where to drop off such tests? Sadly, and faced with all these problems, the discovery of a miracle cure is ideal, but the likelihood of it happening any time soon is slight. 

Even with all the uncertainties and lack of guarantees, lawmakers are flip-flopping with public lives against the safeguards they created by asking and some cases ordering people to rush back into the fray. They know the why and how of these safeguards but the when and where to lower or totally remove them is contentious. They also know that the cases of COVID 19 are still rising and they know that that the government is breaking promises of financial support, suggesting deadly and unsafe remedies, which is frankly unthinkable, and yet social and work safeguards are being lifted in the “so-called testing areas” of the country.

I may have overstressed my point a bit but what this all comes down to is that using one’s judgment in this  COVID 19 age will probably save one’s life.

Think and don’t simply react. Consider that returning home or entering a shop from kicking sand up along the shoreline that you ran the risk of caring home something more than a tan.

Yes, I know, I know. 


It has been a long time since I posted an article about patterns I found incredible. Well, to rectify this lack I have selected a couple of patterns I believe will enhance any woman wardrobe.

To the left is one of the most beautiful Vogue patterns I have seen in years. It is a very feminine, frilly, lacy dress that is also totally cool to wear during Florida hot weather. It can be worn for any occasion or worn just to make you feel better.

MY CHICKEN CACCIATORE

HOMEMADE GOODNESS.

On Thursday, March 12, 2015, I posted my “Not QuiteChicken Cacciatore”. While not a traditional cacciatore recipe it is quite tasty. Nevertheless, this evening I am posting my original recipe, which I simply call, “MY CHICKEN CACCIATORE

It is the recipe we would eat when all the ingredients are on hand. I hope you enjoy it.

MY CHICKEN CACCIATORE

Combine the following to coat chicken:

1/2 c. flour
1/2 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. butchers black pepper
1/4 tsp. paprika

Sauce Ingredients:

3 to 4 lbs, chicken, cut into bite-sized pieces, coated in flour mixture
1 pkg. - mushrooms sliced
1/4 c. olive oil
1 - medium yellow onions, sliced or chopped
1 - bell pepper, sliced or chopped
3 - cloves garlic, sliced or crushed
2-3 medium tomatoes, chopped or 1 1/2 cups canned tomatoes or 2 can stewed tomatoes cutting all dried seasonings by half
1- 2 celery ribs, sliced
28 oz. jar tomato sauce + 1 can tomato paste (or 4- 8 oz. jars tomato sauce or 24 oz. can Bertolli Portobello Mushroom Pasta Sauce + 1 can tomato paste
1/2 tsp dried Italian seasoning, or
1/2 tsp. oregano and
1/2 tsp. basil
1/4 tsp. butchers black pepper
1 tsp salt
1/4 tsp. hot red pepper flakes
¼ cup fine red wine vinegar
8 – 12 ozs fettuccine 

Directions:

1-      After chicken is coated with the flour mixture, brown in hot oil and add the remaining ingredients. Simmer together until the chicken is done
2-      If using tomato paste mix in a bowl with 1 ½ cup of water then pour into skillet.
3-      If needed, use the left-over flour mixture to thicken the sauce.

Serve over hot cooked spaghetti or fettuccine, with salad and garlic bread.

Tuna (Water-Packed) Salad

Hello Darling,

Here’s praying for those of you who have come down with the Coronavirus a safe recovery.

This evening I am posting a recipe for tuna salad. Yes I know there are hundredth of recipes for tuna salad, and I have posted my own. However, all the tuna and seafood recipes I have previously posted I used tuna in vegetable oil. Mainly because I don’t like the watered-down taste of tuna packed in water.

When the days were normal I could buy both tuna in oil for myself and tuna in water for my husband. Being the barbarian he is he likes eating it straight from the can. Yuck! Nevertheless, today was a game-changer in that I was out of Tuna in vegetable oil and decided to use my husband tuna instead.

This new recipe is wonderful in that the added ingredients eliminated the bland watery taste of the tuna and made it a taste bud delight. 




TUNA (WATER) SALAD

INGREDIENTS:

4 can of tuna, 5 oz
1/4 tsp. cilantro
1/2 cup mayonnaise
1/4 tsp dill weeds
1/4 cup chopped red onion
1, chopped
1 ½ tablespoon sweet pickle relish
1/4 teaspoon dry mustard
1/4 teaspoon gumbo file
1/2 cup red, green, or yellow bell pepper
1/8 teaspoon Black Pepper
2 tablespoons Sugar
1/8 teaspoon salt

DIRECTIONS

1.      Pre-chill tuna in refrigerator 2 to 6 hours 
2.      When tuna is chilled remove from container and drain
3.      Place tuna in a large mixing bowl
4.      To moisten all the dry ingredients and sweet pickle relish mixed with tuna and set aside.
5.      Prepare celery stalk, bell pepper, and red onion
6.      Transfer to tuna bowl and mix well then cover. Chill.
7.      When serving add tuna salad to the top of lettuce or fresh spinach.
