“Evelyn’s Quick Two Serving Gumbo Soup”.

Good Afternoon, Darlings

Today, I am posting my recipe for a quick gumbo soup. I call it “Evelyn’s Quick Two Serving Gumbo Soup”. It is based on my “Lunch Gumbo with Margaret Holmes” for one recipe but expanded and never poster. 

Evelyn’s Quick Two Serving Gumbo Soup

Ingredients

2 - 14.5 cans of Margaret Holmes’s Tomatoes, Okra and Corn

½ cup onion diced

½ teaspoon gumbo file

¼ + 1/8 teaspoon Cajun seasoning

¼ teaspoon oyster sauce

¼ teaspoon dried thyme

¼ teaspoon old bay seasoning

16 to 20 large shrimp     

10-12 thinly slice Rodger hot sausages

10 drops vegetable oil

Two shakes of Salt and pepper each


 Directions

1.      Microwave in a microwaveable pressure cooker on power level 5 for 25 minutes.

2.      Stirring occasionally.

3.      Let cool cover for about 5 -10 minutes

4.      Serve over rice.

 

Alternate ingredients if can variety is not available:

Substitute to portion a can of strewed tomatoes, a can corn, and frozen okra.

A Night with Queen, the Tribute

Hello, Darlings

We made it to the Queen tribute concert, which was performed by Gary Mullen and the Works, and although these musicians they were not the real deal they were great. The show was worth every penny. I took a few great pictures, and then just seldom in and enjoyed the music.

This is a selfie of myself and my husband of 42 years, Stanley. Seeing this concert was a double treat as it was Mother Day and a gift for Stanley's birthday.

Evelyn’s Creamy Coleslaw Variation

Today's I posting my variation of an old classic slaw recipe. There none of the fatty additions like sour cream.

Evelyn’s Creamy Coleslaw Variation

Ingredients

1/2 cup mayonnaise or prepared Cole slaw dressing

1-1/2 tablespoon sugar

2 teaspoons white vinegar

1/2 teaspoon celery seed

1/4 teaspoon salt

1/4 teaspoon pepper

1/2 medium head green cabbage, or a mixture of red and green cabbage finely shredded or chopped (4 cups)

1 cup shredded baby carrot,

1/4 cup green or sweet onion, chopped

1 red apple, chopped

1 green apple, chopped

Directions

1.      Mix all ingredients except cabbage, carrot and onion in large plastic bowl with lid

2.      Add remaining ingredients; mix well

3.      Cover and refrigerate at least 1 to 2 hours

And while I’m at it, below is a picture of Patti La Belle on stage at the Mahaffey Theater on February 5, 2023. The reason I did not add it to my post ‘My Surprise Evening with Patti La Belle on Stage’ was because I never got a good picture of her facing front or of the beautiful long train red gown she worn during the latter half of the show and this picture is not the best quality. Still, I want to share it.

BUT!!!!

Tonight it’s “One Night with Queen”, which started out as a birthday gift for my husband but because neither one of us realized until this week that the concert fell on Mother Day, the concert has now turned into his birthday gift and a mother’s day gift for me as well. However, unlike the last concert, I am taking a better camera and a fully charged cell phone.

Zesty Brown Gravy Pot Pie

Hello, Darlings

In my post on Friday,  Fried Chops in Zesty Brown Gravy, I made another batch of gravy in order to have enough for yesterday’s dinner. That being the case, I had some gravy leftover. The leftover came to about a cup and a half, which is quite a bit. Not being a person to throw away good food, I made the following pot pie,

Zesty Brown Gravy Pot Pie  

 

What You'll Need

2 cups diced/sliced golden potatoes, steamed
One 12 oz bag package frozen peas and carrot, thawed
1 lb ground beef, cooked

1 can sliced mushrooms, drained

2 - Readymade pie crusts

Prepared ‘Zesty Brown Gravy’, recipe below

 

Instructions 1:

  1.  Heat the oven to 400°F
  2. Spray a two quart casserole dish, line with a single pie crust
  3. Steam  potatoes for 20 minutes on high,  then set aside when done
  4. While Potatoes are steaming cook ground  beef, drain

 

While ground beef is still cooking make ‘Zesty Brown Gravy’

 

Ingredients:

 

3-4 tablespoons cooking oil

3 semi-rounded tablespoons flour

1 ½ teaspoon Salt

¼ teaspoon, plus a pinch or two more if desired of Shichimi Togarashi seasoning

¼ teaspoon Pepper

¼ teaspoon garlic powder

¼ teaspoon sweet paprika

1/8 teaspoon Pork seasoning

1 medium yellow onion, sliced

1 large green pepper, sliced; any color will do well

3 cups warm water

 

Instructions 2:

 

Heat cooking oil in skillet over medium low heat

Blend in flour, Shichimi Togarashi, garlic, sweet paprika, salt and pepper; cook until bubbly

Stir in 2/3 of water. Add onions and green pepper. Cook and boil 3 minutes, stirring constantly

Reduce to low heat

Add more water as needed, stir occasionally.

Cover skillet and simmer for 10 minutes or until desire thickness is reached.

 

Instructions 3:

 

1.      In a large mixing bowl add peas and carrot, mushrooms, ground beef, and Zesty Brown Gravy’ and mix well to cover all ingredients. Then add potatoes and mix in gently

2.      Add ingredients to the casserole dish, cover with second pie crust, tuck in overlapping crust to seal and perorate the top with a fork to create an “X”

  1. Bake for 35 - 40 minutes or until the beef mixture is hot and bubbling and the crust is golden brown.

 


Serve with toss salad and fruit. Enjoy!!!
