What!?? You’re saying, this is not a cabbage!!

Hallo, Darlings!!

While grocery shopping online have you ever mistakenly bought a Radicchio instead of a red cabbage. I did so today because I was rushing through the selection of leafy vegetables and shopping by sight and not reading.

Well, my first thought after I felt the little rascal in its plastic bag was, “Geez, this is the smallest red cabbage in the world”.” The store had to be joking”. Then I removed it from the bag, and in my surprise I thought it was an exotic cabbage of some kind. I then was ready to seek a refund because I could not have possibly bought this thing.

But, I did. My grocery list said so. And this being the case, I decided to keep it, and to discover just what type of cabbage family it belonged to.

I discovered it was not a cabbage at all, but instead was Italian chicory, and that it has a very bitter taste. To my pallet a raw Radicchio is very, very bitter.  

Now that I knew what I ordered, I now needed to know what to do with it. Because it was pretty, I considered dumping it in hot wax, and preserving it on an end table. Smile. Instead, I searched the almighty world wide net, for a suitable recipe. After going through what seemed like an ended array of recipes for roasted, grilled, sauté, baked and salad Radicchio, I finally found one that stated, “Torta di Radicchio (Radicchio Cake with White Chocolate Glaze)”.

I was intrigued. I was excited. I had to make it, but lo and behold, I did not have all of the ingredients. D__n it.

However, like any good cook, I would not be out done by a recipe just because I was lacking and ingredient or two. It was now …Substitution Time.

And, oh my darlings, the results turned into one of the most delicious snack cakes that my husband and I ever ingested.

Check out my version of a Torta di Radicchio, I call it: Radicchio Cake with Ginger Glaze, and the recipe is below,

Radicchio Cake with Ginger Glaze

Ingredients

1 stick (100 grams) softened butter, divided

1/3 cup (125 grams) granulated sugar

1/3 cup packed light brown sugar

1 lemon, zest and juice

5 ounces (150 grams) head of round red radicchio

3 eggs

1/4 of a teaspoon pre-ground nutmeg

1 teaspoon pure vanilla extract

1 cup (125 grams) all purpose flour

2 teaspoons baking powder

Ginger Glaze Topping

Directions

  1. Heat oven to 350° F and prepare a cake tin (8-inches in diameter) by greasing it with a teaspoon of the butter and lining it with baking paper.
  2. Bring a saucepan of water to boil, add 2 teaspoons of the sugar and all the lemon juice to the water. Pull off the radicchio leaves in from their head and blanch in the boiling water for 2 minutes. Drain very well, then chop finely.
  3. Cream the remaining butter and sugar in a bowl, adding the eggs one at a time, beating well after each addition until smooth and creamy. Add the lemon zest, vanilla, nutmeg and then gently fold in the flour and baking powder. When just combined, add the chopped radicchio.
  4. Pour into prepared cake tin and bake for roughly 45 minutes or until the cake is golden brown and a toothpick inserted in the center comes out clean. Remove from the oven and let cool completely before removing from the tin.

Ginger Glaze Topping

6 tablespoons milk

¼ cup sliced ginger

2 cups confectioners' sugar

Chopped candied ginger, for garnish

Directions

1.       Heat milk and sliced ginger in a saucepan over medium heat

2.       when began milk bubble  remove from heat and let cool;

3.       Then discard ginger, or make a pot of milk tea with it.

4.        Stir confectioners' sugar in the ginger milk.

5.       Finally, Drizzle over cooled warm c Radicchio Cake.

6.       Sprinkle chopped candied ginger on top, optional

 ----

This is not a quick and an easy cake recipe, but it is so good that it can be considered a labor …of love.

Evelyn's Mid-Summer Living Room Makeover

 Hello, Darlings

This morning, I want to share with you my latest living room makeover.

Every few years I change little things to improve the looks of the living area, generally, the living room, kitchen or bath.  I haves such a restless and creative mind that I become obsessed with do-it-yourself projects that involve repurposing and fixing things.

I usually do these makeovers during the spring, however, this year I am a little late because there was so much to do and getting some of the items I wanted to buy became a lengthy ordeal.  Once I had everything ….  THE MAKEOVER BEGAN!

The reason for this year’s makeover is that I became bored with the brown on tan on beige décor. Adding the tan color of the walls, the rooms look smaller and closed in, so a change was needed.  Because the walls are painted tan, I considered repainting them, but opted out.  To liven the living room up a bit I added a splash of teal and light beige to fit in with my Native American and nature motif, so I covered the brown faux leathers sofa and the recliner with teal colored slip covers, and then added a beige medium length shag area rug.

My husband jokingly asked me if I was trying to relive the 1970s to which I told him, no.

The truth of the matter is that I saw the scheme of the room in my mind’s eye and knew it would work. Once I got all the items I needed to work with and the room was done, the whole living room took on a more rich and inviting look that is now pleasing to the eye and the senses. 

And then, I saw it… I found an eye sore. A couple of years back I brought in from the garden a large milk crate, which was acting as a stand for one of the container plants outside. Because the living room décor was mostly brown and tan, the black milk crate, it blended in well enough with the rest of the décor. 

However, since I have added the teal sheers and slipcovers, as well as the beige rug, the milk crate stood out starkly, as seen on the picture below.  My thoughts were: It has to go. Or, better yet, it, as I opted to do, had to change.

So, you might ask. How do you make something that was intended for carting things around into something that can blend in with the rest of the decor?

Can you make something that lacks a certain beauty for use in the living area into something pleasing?

Well, you can … And I did.

The pictures below shows the same milk crate after I added a small pillow, a teal seat cover and some cardboard to make a hidden storage area with a lid underneath. I also braided three strands of macramé cord to make the edging.  And now, it looks great and blends in just as I hoped.

“Evelyn’s Quick Two Serving Gumbo Soup”.

Good Afternoon, Darlings

Today, I am posting my recipe for a quick gumbo soup. I call it “Evelyn’s Quick Two Serving Gumbo Soup”. It is based on my “Lunch Gumbo with Margaret Holmes” for one recipe but expanded and never poster. 

Evelyn’s Quick Two Serving Gumbo Soup

Ingredients

2 - 14.5 cans of Margaret Holmes’s Tomatoes, Okra and Corn

½ cup onion diced

½ teaspoon gumbo file

¼ + 1/8 teaspoon Cajun seasoning

¼ teaspoon oyster sauce

¼ teaspoon dried thyme

¼ teaspoon old bay seasoning

16 to 20 large shrimp     

10-12 thinly slice Rodger hot sausages

10 drops vegetable oil

Two shakes of Salt and pepper each


 Directions

1.      Microwave in a microwaveable pressure cooker on power level 5 for 25 minutes.

2.      Stirring occasionally.

3.      Let cool cover for about 5 -10 minutes

4.      Serve over rice.

 

Alternate ingredients if can variety is not available:

Substitute to portion a can of strewed tomatoes, a can corn, and frozen okra.

A Night with Queen, the Tribute

Hello, Darlings

We made it to the Queen tribute concert, which was performed by Gary Mullen and the Works, and although these musicians were not the real deal, they were great. The show was worth every penny. I took a few great pictures, and then just settled in and enjoyed the music.

This is a selfie of myself and my husband of 42 years, Stanley. Seeing this concert was a double treat as it was Mother Day and a gift for Stanley's birthday.

Evelyn’s Creamy Coleslaw Variation

Today's I posting my variation of an old classic slaw recipe. There none of the fatty additions like sour cream.

Evelyn’s Creamy Coleslaw Variation

Ingredients

1/2 cup mayonnaise or prepared Cole slaw dressing

1-1/2 tablespoon sugar

2 teaspoons white vinegar

1/2 teaspoon celery seed

1/4 teaspoon salt

1/4 teaspoon pepper

1/2 medium head green cabbage, or a mixture of red and green cabbage finely shredded or chopped (4 cups)

1 cup shredded baby carrot,

1/4 cup green or sweet onion, chopped

1 red apple, chopped

1 green apple, chopped

Directions

1.      Mix all ingredients except cabbage, carrot and onion in large plastic bowl with lid

2.      Add remaining ingredients; mix well

3.      Cover and refrigerate at least 1 to 2 hours

And while I’m at it, below is a picture of Patti La Belle on stage at the Mahaffey Theater on February 5, 2023. The reason I did not add it to my post ‘My Surprise Evening with Patti La Belle on Stage’ was because I never got a good picture of her facing front or of the beautiful long train red gown she worn during the latter half of the show and this picture is not the best quality. Still, I want to share it.

BUT!!!!

Tonight it’s “One Night with Queen”, which started out as a birthday gift for my husband but because neither one of us realized until this week that the concert fell on Mother Day, the concert has now turned into his birthday gift and a mother’s day gift for me as well. However, unlike the last concert, I am taking a better camera and a fully charged cell phone.
