Not Quite Chicken Cacciatore

Want Chicken Cacciatore tonight, but you don’t have all the right ingredients. Well, here is a little dish that I whipped up today using what was in the pantry and the refrigerator. I call it “Not Quite Chicken Cacciatore.

Not Quite Chicken Cacciatore

Ingredients:

3- 6 oz cans tomato paste
2 quarts water
3- 4 chicken breasts, skinned, boned and chopped in inch pieces
2 teaspoons Italians seasoning
4 cubes of chicken bouillon
1 ½ teaspoon salt
½ teaspoon black pepper
2 cans of stewed or diced tomatoes, or if your are like me, 2 cups of fresh tomatoes or tomatoes you have chopped and frozen previously
1 medium onion, sliced
8 oz Portobello Mushrooms, sliced
6 cloves of fresh garlic, minced
¼ cup of cooking sherry
½ of a Zucchini
½ of a yellow squash
1 ½ tablespoon of sugar
2 tablespoons of olive oil

Directions:
1.      In a large skillet add olive oil and heat on medium high heat, then add chopped chicken
2.      Cook and stir chicken until all its meat is white and has no pink
3.      Removed chicken from skillet, drain and set aside
4.      In a 5 quart Dutch oven add all ingredients
5.      Cook to a boil, and then simmer on 3 for an hour, and again on 2 for 45 minutes.
6.      While this chicken and veggie mixture is cooking,  prepare fettuccine as directed on package
7.      Serve buttered rolls and side salad, if desired
