LOW-SODIUM CHICKEN SOUP

Hello Darlings,

Below is my best chicken soup recipe made with low-sodium chicken broth. Good for anytime of the year alone or with your favorite sandwich.  Enjoy.

LOW-SODIUM CHICKEN SOUP 

Ingredients

3  frozen chicken halves

2-cups low-sodium chicken broth
3 c. cold water

2 cups wide-ribbon egg noodles
2 sticks of celery, chopped
8  baby carrots, sliced
1/2  onion, chopped
1 1/2 tsp. salt
1/2 tsp. pepper

3/4 tsp cilantro

Directions

1. Chopped chicken into bite size pieces
2. Place chicken, cilantro, 2-cups water, 2-cups low-sodium chicken broth with  salt and pepper into Dutch oven.
3. Boil on medium heat ( level 5 1/2 to 6 ) and cook until chicken is white and all fat has evaporated.
4. Add onion, carrots, celery, again bring to full boil, then reduce heat and simmer until carrots are done.
5. Add the egg noodles in the last 10-minutes.
6. Add the remaining cup of water
7. If needed, add a little more water to cover top of the egg noodles
8. Cook until the egg noodles are done
9. Remove pot from burner

TEXAS PETE'S DEEP FRYER BUFFALO WING

Hello Darlings, 

There are a lot of recipes for baked hot wings. However, some of us crave our hot wings deep fried and crispy with side dishes of wings sauce and dip. Below is my recipe to fit that craving.

TEXAS PETE'S DEEP FRYER BUFFALO WING 

Ingredients

10-12  Frozen Chicken Wings

1 Jar Texas Pete's Buffalo Wing Sauce

1 Jar Marie's Chucky Blue Dip/Dressing.

Black Pepper

Goya Sazonador Total Seasoning

Canola Oil

Directions

1. Fill deep fryer with fresh canola oil.
2. Set deep fryer to preheat at 375 degrees. If using a large deep fryer that uses a lot of heat, set timer between 9-10 minutes. If not, follow your fryer's directions.
3. Defrost and wash chicken wings.  Pat dry.
4. Season lightly with Goya Sazonador Total Seasoning and black pepper
5. Place wings in plastic bag  filled with enough flour to cover them. Shake, shake, shake.
6. Before filling  basket with chicken wings, shake off enough flour so that wings are lightly coated.
7.  Place basket into deep fryer.  Cover. Fry  for 9-10 minutes or until wings are done.
8. Remove basket from deep fryer to drain excess oil and  cool wings on baking rack.

Serve wings with side dishes of Texas Pete Buffalo Wing Sauce and Marie's Chucky Blue Dip/Dressing. Enjoy.

Evelyn's Ground Beef Lasagna With Alfredo & Marinara Sauce

Hello, Darlings!

Have you ever wanted to make lasagna, but discovered that you didn't have any ricotta cheese on hand or the fresh seasonings the recipe normally calls for, and time was running short to get supper on the table. Well ladies, below is my fabulous recipe for a quick and easy lasagna casserole that taste just scrumptious.  

What set this recipe apart is that instead of adding ricotta cheese and a bunch of seasonings, I add Alfredo & marinara sauce and a bit of black pepper. I only add salt to boil the lasagna.

To make this meal I use a 2-quart Pyrex covered glass casserole baking dish and six lasagna pasta. However, you can adjust the recipe to your preference. 

Now for my recipe.

Ground Beef  Lasagna With Alfredo & Marinara Sauce

 

Ingredients

• 1 to 1 1/2 lb ground beef
• 6 Great Value Lasagna Pasta noodles
• 12 ounces Great Value Finely Shredded Mozzarella Cheese
• 1/2 cup Parmesan cheese
• 1/2 small white onion, chopped
• 1 /2  green pepper, chopped
• 4 - 5  oz fresh Portobello mushrooms, sliced
• 1 - 24 ounce jar Bertolli Vineyard Marinara With Mushroom Burgundy Wine Sauce
• 1 - 16 ounce jar Great Value: Classic Alfredo Pasta Sauce
• 1 clove of minced garlic
• 1/8 teaspoon black pepper

Directions

1. Preheat oven to 350 degrees. Cook lasagna according to package directions.

2. While lasagna is on the stove, cook ground beef, onion, garlic, and pepper in skillet until beef is browned; drain.

3. Return beef to skillet and add the Marinara Sauce, and 1 cup of the shredded mozzarella cheese. Stir to mix.

4. Lightly spray a 2-quart Pyrex covered glass casserole baking dish with cooking spray.

5. Place 2 lasagna pasta in bottom of casserole dish. For each layer cut the hangover portion of each lasagna noodle, and place them in center of other strips.

6. Add 1/3 of the meat mixture on the lasagna pasta and then add some of the Alfredo sauce, mushrooms, and mozzarella cheese.

7. Repeat with all three layers, but for the very top layer add a 1/2 cup of parmesan cheese and an additional 1/2 cup of shredded mozzarella cheese.

8. Place a baking sheet in bottom of oven to catch any boil over .

9. Cover and bake for 30 minutes.

10. After 30 minutes uncover casserole and baked for 10 to 15 minutes more, or until top is golden brown.

11. Serve with a nice tossed salad.
