Chilled Festive Clam & Tuna Salad


Here is another family recipe for my quick and easy seafood salad.

Ingredients:

·         4 - 5 oz cans tuna
·         1 - 10 oz can whole baby clams, if desired
·         1 stalk Celery, chopped
·         2 slices Red onion, chopped
·         2 slices White onion, chopped
·         3/4 large apple, any kind chopped
·         2 to 3 teaspoons Sugar
·         4 baby carrots, chopped
·         Dill weed
·         Mayonnaise
·         Salt and pepper for taste

Direction: 

  1. ·         Place tuna and clam containers in refrigerator 2 to 6 hours (I generally keep a few cans in the refrigerator at all times)
  2. ·         When chilled drain tuna and clams
  3. ·         In a large bowl add seafood, veggies, and sugar
  4. ·         Then add enough mayonnaise to suit your personal taste
  5. ·         Sprinkle in enough dill to cover top of seafood mixture and stir in well.
  6. ·                    Sprinkle top of seafood with paprika
  7. ·         Add salt and pepper for taste, if desired

There you have it; the seafood salad is ready to eat. The plate above is served with wheat toast and mango slices, which is a delicious meal for dinner or a lazy weekend afternoon.

Chilled Ditalini Pasta Salad


Here is a family favorite recipe for a chilled pasta salad. It is quick and easy to make, and while I list Ditalini as the main ingredient, Spaghetti, small Ziti, Penne, or any other small pasta will work. You can adjust these ingredients size to suit your family size.

Chilled Ditalini Pasta Salad 

For ingredients you will need:
·         2 cups Ditalini
·         ½ teaspoon of thyme
·         3 garlic cloves, chopped
·         2 stalks Celery, chopped
·         ¼  cup Red onion, chopped
·         ¼ White onion, chopped
·         ½ cup Red, orange, or yellow bell pepper, chopped
·         ½  cup Green pepper, chopped
1     l large tomato
·         1 large apple, any kind chopped
·         1 tablespoon Sugar
·         6 to 8 baby carrots, chopped
·         One bottle of Zesty Italian Dressing
·         Salt and pepper for taste

Direction:
·         Prepare pasta following recipe of package.
·         Drain, rinse in cold water until cool, and then quick chill with ice cubes, then when completely chilled drain to remove remaining ice
cubes.
·         In a large bowl add pasta, all the veggies, and the thyme. Mix well.
·         Then add enough Zesty Italian Dressing to suit your personal taste. Remember that pasta absorbs fluids. So you might start with one cup and then add a little more dressing just before serving.
·         Chilled 2 to 6 hours
There you have it, the most quick and easy pasta salad ever.

Tip:

I find it easy when chopping the above ingredients to chop a little extra to keep my freezer bag filled for future recipes. In addition, when my tomatoes start to become juicy, I chop them up to freeze them as well. These frozen baggies come in handy when you are in a rush to prepare a meal, or if you are under the weather and you don’t want to spend a great deal of time in the kitchen. 

What to do with the seeds from bell pepper and the leaves from celery?  Most people would probably throw these parts of the veggies away. However, you can chop up the celery leaves and add them with the bell pepper seeds to recipes, especially the tomato based ones. You can also add them in with your freezer bag of chopped veggies.
