Crispy Deep Fried Skinless Chicken Breast

We all know that frying skinless chicken breast is tricky. The problem is how to fry the breast without drying it out. Below is my homemade restaurant style deep fried chicken breast that is guaranteed to be golden,  crispy and moist for every meal. This recipe is great with a main meal, for chicken sandwiches, or as a topping for a chicken salad. Enjoy.


Crispy Deep Fried Skinless Chicken Breast

Ingredients (for 2)
  • 2 boneless skinless chicken breasts
  • 3 garlic cloves, minced
  • 1 sprig rosemary
  • 2 tablespoons olive oil
  • salt and pepper ( can substitute other seasonings like seasoned salt and cayenne pepper, or  lemon pepper if desired) 

Directions:
  1. Add the chicken to a zip lock bag, along with the garlic, rosemary and olive oil
  2. Marinate it for 2 to 8 hours or even over night
  3. Heat deep fryer to 375 degrees
  4. Remove the chicken from the bag and season both sides with salt and pepper
  5.  Coat it generously with flour  
  6. Put chicken back in its rosemary mixture bag
  7. Coat it until flour is moist
  8. Remove chicken from bag and generously flour again
  9. Deep fry chicken for 10 minute
  10. Turning once after 5 minutes
